Millet Carob Chip Cookies

This recipe makes a tasty, moist drop cookie.

Ingredients
Millet flour | 1/2 cup | |
Barley flour | 1/2 cup | |
Instant oatmeal | 1/4 cup | |
Non-alum baking powder | 2 tsp | |
Salt | 1/2 tsp | |
Finely chopped nuts (optional) | 2 Tbsp | |
Sunflower oil | 4 Tbsp | |
Honey (or agave or maple syrup) | 4 Tbsp | |
Soy milk | 1/4 cup | |
Carob chips | 1/2 cup |
Directions
- Preheat oven to 350 degrees F.
- Mix dry ingredients together.
- Stir liquid ingredients together until honey dissolves.
- Stir liquid and dry mixtures just until evenly mixed.
- Fold in carob chips.
- Drop by teaspoonfuls onto oiled cookie sheet.
- Bake 15 minutes at 350 F. Cool.
