Millet-Rice Quick Bread or Muffins

This recipe makes a very good gluten-free muffin. Millet, a delicately flavoured grain, is a good source of proten and the B vitamins thiamin, riboflavin, niacin, pyridoxine and folate. Yield: 1 loaf or 12 muffins

Ingredients

Brown rice flour 2 cups
Millet flour 1/2 cup
Non-alum baking powder 1 Tbsp
Sea salt (optional) 1/2 tsp
Water or apple juice concentrate 1 cup
Unrefined vegetable oil 1/4 cup
Rice syrup 1/4 cup
Egg 1 ea

Directions

  1. Preheat oven to 375 F.
  2. Combine all dry ingredients.
  3. In a separate bowl mix all liquids; add to dry ingredients.
  4. For loaf: pour into well-oiled pan and bake 35-40 minutes or until done.
  5. For muffins, fill cups full and bake 15-20 minutes.
