Millet-Rice Quick Bread or Muffins

This recipe makes a very good gluten-free muffin. Millet, a delicately flavoured grain, is a good source of proten and the B vitamins thiamin, riboflavin, niacin, pyridoxine and folate. Yield: 1 loaf or 12 muffins
Ingredients
| Brown rice flour | 2 cups | |
| Millet flour | 1/2 cup | |
| Non-alum baking powder | 1 Tbsp | |
| Sea salt (optional) | 1/2 tsp | |
| Water or apple juice concentrate | 1 cup | |
| Unrefined vegetable oil | 1/4 cup | |
| Rice syrup | 1/4 cup | |
| Egg | 1 ea |
Directions
- Preheat oven to 375 F.
- Combine all dry ingredients.
- In a separate bowl mix all liquids; add to dry ingredients.
- For loaf: pour into well-oiled pan and bake 35-40 minutes or until done.
- For muffins, fill cups full and bake 15-20 minutes.
