No-Bake Strawberry Pie

When I tested this pie recipe I found it easy to make and very tasty. I added some chocolate shavings on top to give it a bit more pizzaz. The one downside is that it’s hard to slice up the pie nicely and neatly. The photo below was the best looking slice I could get.
If I were to make it again I might mix up a bit of agar powder and add it to the strawberries before refrigerating. This should help the pie firm up a bit and allow for neater slicing. Wikihow has a handy tutorial on how to use agar products for gelling and thickening purposes. If you choose to use agar you might need to reduce the amount of strawberries a bit. For those of you following a raw food diet I will add some info about agar in the comments below
Another change would be to increase the nuts and dates so the pie crust comes a little higherΒ up the sides of the pan. This might also help the slices hold together better.
All in all, this is a pretty good recipe even if it needs a bit of tweaking. Simple, refreshing and no need to use a hot oven on a summer day!

Nutty Date Crust
Walnuts | 1/2 cup | |
Almonds | 1/2 cup | |
Dates, pitted | 3/4 cup (or more) |
Filling
Strawberries, sliced | 5 cups | |
Maple syrup | 1 Tbsp | |
Chocolate shavings (optl.) | as needed |
Directions
To make the crust:
- Grind nuts finely in a food processor and set aside.
- Place the dates in a food processor or blender and grind to form a paste. With the motor still running, add the ground nuts & blend until the mixture forms a ball (if needed, add a few more dates).
- Press this mixture evenly on the bottom of a lightly oiled 8″ pie pan.
- Refrigerate until ready to fill.
To make the filling:
- Toss the strawberries with the maple syrup.
- Spoon into the pie crust.
- Cover with waxed paper & refrigerate for 1 hour before serving.

I mentioned looking for some info on using agar in a Raw Food diet. I did some Googling and it seems many raw recipes do use agar.
