Piña Colada Sorbet

This light and refreshing sorbet recipe is designed for a Vitamix blender or equivalent. Please consult your Vitamix manual for more information on blending frozen treats. Makes 2 – 4 servings.
Ingredients
Cold Pineapple juice | 1/2 cup | |
Stevia extract powder | 1/8 tsp or to taste | |
Frozen pineapple chunks | 1 cup | |
Canned coconut milk, unsweetened | 1 cup |
Directions
- Start the night before with the coconut milk. Shake well before opening. Pour into ice cube tray to make frozen cubes. Note the volume of coconut milk needed to fill your tray (usually 1 cup of liquid fills 1/2 a tray).
- If frozen pineapple is not available at your local grocer then use a fresh one. Cut into chunks and freeze overnight in one cup portions.
- When ready to make your sorbet, pour pineapple juice into Vitamix container. Add stevia. It is always best to start with a smaller amount of stevia and add more if needed. Secure two part lid and blend for a few seconds on low speed.
- Add pineapple and coconut milk cubes. Walk speed up to high pressing frozen ingredients into the blades with tamper until desired consistency is reached. Do not over-blend (aim for a soft-serve ice cream texture).
- Scoop out into bowls and serve immediately. Enjoy!
Helpful Hints
- Add a little rum flavouring for a more authentic piña colada taste!
- Be careful with the stevia. Start with less and add more if needed. If you prefer liquid stevia use 8 – 10 drops (or less, or to taste).
- If you are following an animal-based diet (meat and fruit) you may wish to swap the stevia for honey or maple syrup.
- This recipe was tested using low fat coconut milk. If you prefer full fat, go ahead and try it. Let me know how it works out in the comments section.
