Quick & Easy Cinnamon Muffins

These gluten-free and dairy-free muffins have a cinnamon surprise inside and a whisper of cinnamon on top.

Ingredients
Honey | 1/2 cup | |
Oil | 1/4 cup | |
Eggs | 2 ea | |
Brown rice flour | 1 1/2 cups | |
Baking soda | 2 tsp | |
Cream of tartar | 1/4 tsp | |
Soy milk | 1/2 cup | |
Cinnamon | 2 tsp | |
Brown sugar | 4 tsp |
Directions
- In a mixing bowl, mix together honey and oil.
- Then beat in the eggs.
- Sift together the flour, baking soda and cream of tartar.
- Add to the egg mixture alternately with the soy milk.
- Don’t overbeat. These are best mixed by hand.
- Mix together brown sugar and cinnamon.
- Pour batter into greased muffin cups 1/2 full.
- Sprinkle half the cinnamon mixture on top.
- Pour in remaining batter and sprinkle on remaining cinnamon mixture.
- Bake at 350 F for 15 minutes.
