Sage and Onion Stuffing

An easy, flavourful side dish perfect for a vegetarian feast!
Ingredients
Sage leaves | 3 Tbsp | |
Boiling water | 1 cup | |
Oil | 2 1/2 Tbsp | |
Onions, finely chopped | 1/2 lb | |
Fresh bread crumbs | 4 cups | |
Tart apple | 1 ea | |
Lemon rind, grated | 1 tsp | |
Eggs, beaten | 2 ea | |
Salt | Pinch (or to taste) | |
Pepper | Pinch (or to taste) |
Directions
- Pre-heat oven to 350 F.
- Put sage leaves in boiling water and steep 15 minutes. Strain, reserving the liquid and discarding the leaves.
- Meanwhile, heat oil in a large skillet. Add onions and sautΓ© until lightly browned.
- In a mixing bowl, combine onions and breadcrumbs and the remaining ingredients. Sprinkle sage stock over mixture until it is evenly moistened.
- Transfer to an oiled casserole dish and bake until outside is crispy and golden, about 35 – 40 minutes. Serve with vegetarian gravy and your own favourite cranberry sauce. (You can make your own gravy or try a ready-to-use mix from your local health food store.)
Editor’s Notes
- This recipe, has a unique instruction to mage a sage stock instead of just adding dried sage to the stuffing. I would assume this is made from fresh sage leaves.
