Springtime Seaweed Medley
About
This easy, nutritious dish can be served hot or cold. Use your intuition and add other ingredients to your liking.

Ingredients
| Dried nori or seaweed of your choice | 4 cups | |
| Sesame seeds | 1/4 cup | |
| Toasted sesame oil | 1 Tbsp | |
| Onions, chopped | 2 ea | |
| Carrot, grated | 1 ea | |
| Apple cider or rice vinegar | 2 Tbsp | |
| Rice or maple syrup | 1 Tbsp | |
| Wheat-free Tamari | 2 Tbsp | |
| Salt | to taste | |
| Cayenne | to taste | |
| Ground pepper | to taste |
Directions
- Cover seaweed with cold water for 5 minutes, drain.
- Roast sesame seeds in dry skillet for 5 minutes on medium heat, stirring often. Set aside.
- Heat oil over medium heat in another skillet and add onions. Saute for 5 minutes until soft. Add carrot, seaweed, vinegar, tamari, and syrup. Simmer 10 minutes. Add and adjust salt and peppers if you wish.
- Top with sesame seeds.
- Serve hot or cold. Enjoy!
