Springtime Seaweed Medley

This easy, nutritious dish can be served hot or cold. Use your intuition and add other ingredients to your liking.

Ingredients

Dried nori or seaweed of your choice 4 cups
Sesame seeds 1/4 cup
Toasted sesame oil 1 Tbsp
Onions, chopped 2 ea
Carrot, grated 1 ea
Apple cider or rice vinegar 2 Tbsp
Rice or maple syrup 1 Tbsp
Wheat-free Tamari 2 Tbsp
Salt to taste
Cayenne to taste
Ground pepper to taste

Directions

  1. Cover seaweed with cold water for 5 minutes, drain.
  2. Roast sesame seeds in dry skillet for 5 minutes on medium heat, stirring often. Set aside.
  3. Heat oil over medium heat in another skillet and add onions. Saute for 5 minutes until soft. Add carrot, seaweed, vinegar, tamari, and syrup. Simmer 10 minutes. Add and adjust salt and peppers if you wish.
  4. Top with sesame seeds.
  5. Serve hot or cold. Enjoy!
