Tahini-Rice Cookies

These cookies have an excellent flavour and are similar to peanut butter cookies. A great alternative for those who have peanut allergies.
Ingredients
Sesame tahini | 1 cup | |
Honey (or agave or maple syrup) | 1/2 cup | |
Vanilla | 1 tsp | |
Almond extract | 1/2 tsp | |
Brown Rice Flour | 1 cup | |
Chopped or ground nuts or seeds of choice | 1/2 cup | |
Non-alum baking powder | 1 tsp |
Directions
- Cream tahini, honey, vanilla, and almond extract together, then mix in ground or chopped nuts/seeds.
- Mix rice flour and baking powder. Add to sesame mixture.
- Form into balls and place on lightly oiled baking sheet. Flatten slightly.
- Bake at 350 F. for 15-20 minutes or until barely golden.
