Tahini-Rice Cookies

Tahini-Rice Cookies

These cookies have an excellent flavour and are similar to peanut butter cookies. A great alternative for those who have peanut allergies.

Ingredients

Sesame tahini 1 cup
Honey (or agave or maple syrup) 1/2 cup
Vanilla 1 tsp
Almond extract 1/2 tsp
Brown Rice Flour 1 cup
Chopped or ground nuts or seeds of choice 1/2 cup
Non-alum baking powder 1 tsp

Directions

  1. Cream tahini, honey, vanilla, and almond extract together, then mix in ground or chopped nuts/seeds.
  2. Mix rice flour and baking powder. Add to sesame mixture.
  3. Form into balls and place on lightly oiled baking sheet. Flatten slightly.
  4. Bake at 350 F. for 15-20 minutes or until barely golden.
