Tofu Chocolate Dream Pie

I brought this pie into work for people to try. The consensus was definitely thumbs up!ย A great alternative to cream pie for those who don’t eat dairy.

Ingredients
Mori-Nu Lite Silken Tofu - Firm | 2 pkg | |
Honey | 3/4 cup | |
Vanilla | 3 tsp | |
Cocoa Powder | 1/2 cup | |
Banana slices | to taste | |
Almonds, slivered | to taste |
Directions
- In a food processor whip tofu until smooth.
- Heat honey 90 seconds in microwave on medium high. Pour honey over cocoa powder and stir until smooth. Add vanilla.
- Add chocolate mixture to tofu and continue blending for one minute. Pour into pre-made pie shell or custard cups and chill for 1 to 2 hours.
- Garnish with banana slices andย slivered almonds.
Helpful Hints
- This recipe is categorized as “plant-based”. If you are vegan or prefer an alternative to honey try brown rice syrup, agave nectar or maple syrup.
- Any berry or nut extract can be used in place of (or in addition to) vanilla in this pie. Be aware that tofu carries the flavours very well, so be light-handed with any flavour additions.
- For a firmer texture use extra-firm tofu.
Mori-Nu tofu is usually found in the refrigerated section of your local Health First store or supermarket, along with other tofu and tempeh products. However, it can be stored at room temperature until opened.
