Turnip Loaf
About
A very tasty dish that’s great to serve at a family gathering. The apples and brown sugar take the edge off the strong turnip flavour.
Ingredients
| Medium Turnip | 1 ea | |
| Salt | 1/2 tsp | |
| Milk | 1/3 cup | |
| Egg | 1 ea | |
| Medium onion, chopped | 1 ea | |
| Medium apple, peeled & chopped | 1 ea | |
| Flour | 1/4 cup | |
| Brown sugar or maple syrup | 2 - 3 Tbsp | |
| Baking powder | 1 tsp | |
| Nutmeg | 1/4 tsp | |
| Pepper | dash | |
| Butter | 2 Tbsp |
Directions
- Preheat oven to 375 F.
- Cut turnip into large pieces. Place in a pot with a small quantity of water and sprinkle with salt. Boil until soft.
- Drain off all but 1/2 cup water. Add milk and mash. Beat in egg.
- Add rest of ingredients, mixing well. Add butter.
- Place in baking dish and bake for 45 minutes.
Helpful Hints
- If you don’t have any eggs on hand you can replace the egg with 1/3 cup mayonnaise.
- The original recipe did not include apple. You can omit that ingredient if preferred, or you can omit the onion if it’s not to your liking.
