Vegan Deli Sandwich

Nowadays there are lots of deli meat alternatives for people on a plant-based diet. Look for brands such as Tofurkey, Yves Veggie Cuisine and more. This recipe mimics a traditional deli sandwich and would make a nice treat for the lunchbox. This recipe calls for rye bread or a bagel, but you can use any bread you like. The above feature photo shows a bread roll.

Ingredients

Rye bread or bagel 2 slices
Mustard to taste
Vegan mayonnaise to taste
Veggie deli meats to taste
Shredded lettuce, dairy-free cheese, and/or sauerkraut to taste
Sliced tomato (optional) to taste

Directions

  1. Spread mustard on one slice of bread and soy mayo on the other.
  2. Layer the remaining ingredients and wrap up for the lunch box.
  3. Pack a pickle too.

  • It sure was hard to find a nice photo for this deli style sandwich. It was more important to me that the the ingredients be plant-based than to have the exact kind of bread in the ingredients. So I found a photo using vegetarian “sausage” on a bread roll.
