Vegetarian Quesadilla

This yummy vegetarian recipe is easy to prepare. Enjoy it at home or packed in a lunchbox.
Ingredients
Flour tortillas | 2 ea | |
Refried beans | to taste | |
Salsa | to taste | |
Grated cheese | to taste | |
Choice of chopped veggies | to taste |
Directions
- In a fry pan over low heat, place a flour tortilla.
- Spread refried beans on the tortilla and then spread on salsa.
- Top with grated cheese and veggies.
- Top with the remaining tortilla and continue to cook as you would a grilled cheese sandwich.
- Set aside to cool when cooking is complete.
- Once cool, cut into triangles and enjoy.
