Wild and Basmati Rice Salad

This quick and easy salad is dressed with an Asian inspired Chili-Sesame Vinaigrette. Serve alongside a protein food such as grilled or poached tempeh. The above photo shows a mix of wild rice and white basmati rice. If you prefer, you can use brown basmati rice instead of white which has more nutrients and fibre.
Serves 6 – 8.
Ingredients
Basmati rice, cooked | 2 cups | |
Wild rice, cooked | 2 cups | |
Chili-Sesame Vinaigrette | 3/4 cup | |
Salt and pepper to taste | to taste | |
Fresh dill | 2 Tbsp | |
Walnut pieces and halves, toasted | 2 Tbsp |
Directions
- Mix basmati rice and wild rice together gently. Add vinaigrette a little at a time until rice is moistened.
- Refrigerate any extra dressing for later use with steamed veggies or salads.
- Allow to rest for several hours for flavours to develop.
- When serving, garnish with dill and walnuts.
