Indian Shrimp Curry

Indian Shrimp Curry

About

This easy, tasty dish is great for seafood lovers but can also be made with leftover chicken or lamb.

Ingredients

Butter 2 Tbs
Chopped onion 2 Tbs
Chopped celery 2 Tbs
Flour, unbleached 3 Tbs
Curry powder 1 tsp (or more)
Chicken bouillon cube 1 ea
Salt 1/2 tsp
Milk 2 cups
Cooked shrimp 2 1/2 cups

Directions

  1. Melt butter and saute onion and celery until tender.
  2. Blend in flour, curry and chicken bouillon.
  3. Gradually stir in milk. Cook over med. stirring constantly until thickened and mixture comes to a boil.
  4. Stir in shrimp.
  5. Serve over rice with assorted condiments: yogurt, coconut, chutney, raisins, etc.
