Monster Cookie Balls

This recipe is wheat, sugar and soy free and is also made without any leavening agents. These cookies are high in fat but most of it is in the form of nut butter. The remaining fat consists of a smaller amount of butter (or non-hydrogenated margarine).
If you are on a gluten-free diet be sure to buy gluten-free oats such as Only Oats. Most oats contain gluten from being in contact with wheat. Companies that make gluten-free oats ensure the oats are kept away from wheat and other gluten-containing grains.
Ingredients
Rolled oats | 2 cups | |
Eggs, whole | 2 ea | |
Water (spring or filtered) | 1 cup | |
Butter or non-hydrogenated margarine | 1 stick | |
Nut butter, your choice | 1 cup | |
Stevia herbal powder | 2 tsp | |
Apple, large, finely diced | 1 ea | |
Raisins or currents | 3/4 cup | |
Carob chips (optional) | 1/2 cup | |
Pecans, whole | 1/4 to 1/2 lb |
Note: this recipe calls for stevia herbal powder (green). If you prefer stevia powdered extract (white) then reduce amount to 1/2 tsp or less as it is much sweeter than the herbal powder.
Directions
- Combine rolled oats, eggs, water and butter in a mixing bowl.
- Stir in nut butter and remaining ingredients (except the pecans).
- Form into balls and place onto an oiled cookie sheet. Place a whole pecan on top of each ball. Bake at 350 degrees for 10-12 minutes.
Helpful Hints
- If you find the batter too sticky to make balls, try making them as drop cookies.
- Be sure to form or drop the cookies to size you’d like them to be. These cookies are non-leavened so they will not increase in size during baking

Makes a moist hearty cookie. My husband and coworkers really liked them! I found the batter did not form into balls (too sticky– perhaps because I used quick oats). So instead, I made them like drop cookies. Be sure to drop the cookies to the size you’d like as these cookies are non-leavened. I used almond butter, currants and 2 tablespoons carob powder instead of carob chips.
