Papaya Amaranth Cookies
About
Makes a tasty cookie with pretty piece of papaya in the middle.
Yield: 18 cookies
Ingredients
Amaranth Flour | 1/2 cup | |
Light Spelt flour | 1 cup | |
Dry milk | 2 Tbsp | |
Non-alum baking powder | 1 tsp | |
Sea salt (optional) | 1/8 tsp | |
Unrefined Vegetable Oil | 1/3 cup | |
Honey or maple syrup | 1/3 cup | |
Water | 4 Tbsp | |
Vanilla or almond extract | 1/2 tsp | |
Dried papaya, chopped into 1/2" chunks | 18 pieces |
Directions
- Mix dry ingredients and liquids in separate bowls, then combine and mix thoroughly. If batter seems a bit too thin add a couple more tablespoons of amaranth flour.
- Drop spoonfuls of batter on lightly oiled baking sheet, and press a chunk of papaya into the center of each cookie.
- Bake at 325 F. for 12-15 minutes.
- Cool on a rack before serving.
A reminder that while amaranth is a gluten-free grain, spelt is not. So this is not a gluten-free recipe.
