Applesauce Brownies

A favourite recipe from my kitchen.
Ingredients
Unbleached all-purpose flour | 1 1/2 cups | |
Carob or cocoa powder | 3/4 cup | |
Baking powder | 1 1/2 tsp | |
Eggs | 2 ea | |
Honey | 1/2 cup | |
Unsweetened applesauce | 1 cup | |
Melted butter (or oil) | 3 Tbsp | |
Vanilla | 1 tsp |
Directions
- Mix wet and dry ingredients separately, then combine.
- Pour into prepared 8 x 8 pan and bake at 350 F. 35 – 40 minutes.
Variation: Add chopped/slivered almonds and substitute the vanilla with 1/2 tsp. almond extract.

When I was creating the tags for this recipe I wondered if I should have a category for “brownies” or just put them under “cakes”. I did a little Googling and discovered that brownies are actually considered to be a type of cookie! Check out Quora for more info.
In the end however, I decided to have a separte category for brownies & bars.
To reduce the sugar content in this recipe you could replace the 1/2 cup honey with a few drops of liquid stevia extract, or 1/8 tsp powdered stevia extract (check package instructions as sweetness can vary among brands). You will need to increase the liquid content by an equal amount . . . Adding an extra 1/2 cup of applesauce would suffice.
