This recipe, by a resident of Kagawong, Manitoulin Is, ON, won first prize in the Focus on Fish Recipe Book published by the Manitoulin Expositor. I have made it often. I takes a bit of work but the result is scrumptious!

Serves 5.

Ingredients

Perch fillets 2 lbs.
Flour 1 cup
Lemon Pepper 2 tsp.
Eggs 2 ea.
Milk 1/4 cup
Bread crumbs 2 cups
Coconut (I use unsweetened, dessicated) 1/2 cup

Directions

  1. On a flat plate, combine flour and lemon pepper. In a separate bowl, beat eggs & milk with a fork. On a second plate, combine bread crumbs & coconut.
  2. Blot perch fillets dry with a paper towel. Dredge in flour mixture then dip in egg mixture. Next press fillets into coconut/crumb mixture until well covered.
  3. Fry till golden brown, turning just once.
  4. Serve with wedges of fresh lemon.
