Coconut Perch

This recipe, by a resident of Kagawong, Manitoulin Is, ON, won first prize in the Focus on Fish Recipe Book published by the Manitoulin Expositor. I have made it often. I takes a bit of work but the result is scrumptious!
Serves 5.
Ingredients
Perch fillets | 2 lbs. | |
Flour | 1 cup | |
Lemon Pepper | 2 tsp. | |
Eggs | 2 ea. | |
Milk | 1/4 cup | |
Bread crumbs | 2 cups | |
Coconut (I use unsweetened, dessicated) | 1/2 cup |
Directions
- On a flat plate, combine flour and lemon pepper. In a separate bowl, beat eggs & milk with a fork. On a second plate, combine bread crumbs & coconut.
- Blot perch fillets dry with a paper towel. Dredge in flour mixture then dip in egg mixture. Next press fillets into coconut/crumb mixture until well covered.
- Fry till golden brown, turning just once.
- Serve with wedges of fresh lemon.
