Salmon or Rainbow Trout Cakes

Quick, easy & very tasty. Great on a bun! Make ahead and freeze for quick meals later.

Serves 4.

Ingredients

Salmon or rainbow trout fillets, poached 200 gm
Chopped onion, cooked in microwave 1/4 cup
Mayonnaise 1 or more Tbsp.
Dijon mustard 1 tsp.
Lemon juice 1 tsp.
Egg 1 ea
Bread crumbs (I use Panko) 1/2 cup
Dried parsley 1 tsp.
Oil 1 Tbsp.

Directions

  1. Remove & discard skin and any grey fat from the fish.
  2. Mince fish and combine with rest of ingredients (except oil).
  3. Form mixture into 4 patties.
  4. Spray skillet with non-stick cooking spray & heat 1 Tbsp. oil over medium heat and fry cakes on each side until golden.
