These puddings are so delicious and easy to make you’ll never want to buy pudding again! Plus, you can modify the ingredients to make them sugar and dairy-free.

Servings: 4

Base Ingredients

Sugar or Krisda 1/4 cup
Salt dash
Cornstarch 3 Tbsp
Milk or almond milk 2 cups

Mocha

Cocoa powder 2 Tbsp
Instant Coffee 1 - 2 Tbsp
Butter 1 Tbsp
Vanilla or rum flavour 1/2 tsp

Vanilla

Butter 2 tsp
Vanilla extract 1/2 tsp

Chocolate

Cocoa 3 Tbsp
Butter 1 Tbsp
Vanilla extract 1/4 tsp
Almond extract 1/4 tsp

Coconut

Coconut 1 cup
Vanilla extract 1/2 tsp
Almond extract 1/4 tsp

Toppings

Fruit, nuts, chocolate chips and / or muesli (optional)

Directions

  1. Mix sugar, salt, cornstarch plus any dry ingredients from your chosen flavour.
  2. Whisk in milk or almond milk.
  3. Heat over medium heat whisking constantly until boiling. Simmer for 1 minute while continuing to whisk. Using a whisk will help ensure a smooth texture.
  4. Add remaining ingredients from your chosen flavour and stir well.
  5. While still warm, pour into small serving dishes.
  6. Once cooled, top with decorative ingredients (if using).
  7. Chill until ready to serve.

Helpful Hints

  1. If you prefer your pudding without a skin on top, cover the serving dishes with plastic wrap while the pudding cools. It should still be warm but not too hot because the plastic wrap has to be touching the pudding to ensure there is no air exposure. Keep wrap on the surface until fully chilled; remove to decorate and serve. If you don’t want to use plastic, you can also use waxed paper – just use extra care to ensure there are no air pockets.
  2. You can decorate your puddings with fruits such as berries, or with nuts, chocolate chips or muesli. The photo above is a mocha pudding topped with a grain-free muesli by KZ Clean Eating (Chocolate & Strawberry flavour), available at several online stores such as NaturalFoodMart.ca and Amazon.ca.
  3. The pudding in the photo was made with almond milk. If you are avoiding dairy (but don’t like almond milk) you can use your favourite dairy-free milk. You can also replace the butter with a plant-based substitute.
  4. You can substitute the sugar for any sweetener to your liking. Just ensure the amount you use has a sweetness equivalent to 1/4 cup white sugar. The pudding in the photo was made with Krisda Monk Fruit Sweetener which can be used as a 1:1 replacement for sugar.
  5. To cut down on the time needed to whisk the milk at the stove, you can warm it in the microwave for one minute.
