Salmon or Rainbow Trout Cakes

Quick, easy & very tasty. Great on a bun! Make ahead and freeze for quick meals later.
Serves 4.
Ingredients
Salmon or rainbow trout fillets, poached | 200 gm | |
Chopped onion, cooked in microwave | 1/4 cup | |
Mayonnaise | 1 or more Tbsp. | |
Dijon mustard | 1 tsp. | |
Lemon juice | 1 tsp. | |
Egg | 1 ea | |
Bread crumbs (I use Panko) | 1/2 cup | |
Dried parsley | 1 tsp. | |
Oil | 1 Tbsp. |
Directions
- Remove & discard skin and any grey fat from the fish.
- Mince fish and combine with rest of ingredients (except oil).
- Form mixture into 4 patties.
- Spray skillet with non-stick cooking spray & heat 1 Tbsp. oil over medium heat and fry cakes on each side until golden.
