Sesame Seed Cookies

A tasty cookie recipe suitable for those on a plant-based or dairy-free diet. If you are using an egg replacer, Ener-G is a well known brand. Alternatively, you can use 1 tablespoon ground flaxseed mixed with 3 tablespoons warm water.

Yield: 48 cookies

Ingredients

Sesame seeds 1/2 cup
Coconut 1 cup
Whole wheat flour 2 cups
Non-alum baking powder 1 tsp
Baking soda 1 tsp
Sea salt (optional) 1/2 tsp
Unrefined vegetable oil 1/3 cup
Egg (or egg replacer) 1 ea
Honey 1/2 cup
Vanilla 2 tsp
Soy milk 1 cup

Directions

  1. Lightly roast sesame seeds on cookie sheet in oven.
  2. Beat together oil, honey, egg (or egg replacer as indicated in package instructions) and vanilla.
  3. Mix all the dry ingredients and add to the liquid mixture.
  4. Stir in soy milk.
  5. Drop by the teaspoon onto an ungreased cookie sheet.
  6. Flatten with a fork.
  7. Bake at 350 F. for 10 minutes.
