Sesame Seed Cookies

A tasty cookie recipe suitable for those on a plant-based or dairy-free diet. If you are using an egg replacer, Ener-G is a well known brand. Alternatively, you can use 1 tablespoon ground flaxseed mixed with 3 tablespoons warm water.
Yield: 48 cookies
Ingredients
| Sesame seeds | 1/2 cup | |
| Coconut | 1 cup | |
| Whole wheat flour | 2 cups | |
| Non-alum baking powder | 1 tsp | |
| Baking soda | 1 tsp | |
| Sea salt (optional) | 1/2 tsp | |
| Unrefined vegetable oil | 1/3 cup | |
| Egg (or egg replacer) | 1 ea | |
| Honey | 1/2 cup | |
| Vanilla | 2 tsp | |
| Soy milk | 1 cup |
Directions
- Lightly roast sesame seeds on cookie sheet in oven.
- Beat together oil, honey, egg (or egg replacer as indicated in package instructions) and vanilla.
- Mix all the dry ingredients and add to the liquid mixture.
- Stir in soy milk.
- Drop by the teaspoon onto an ungreased cookie sheet.
- Flatten with a fork.
- Bake at 350 F. for 10 minutes.
